Recipe corner: collard green burritos and fruity green smoothie

Collard Green Burritos

The ingredients for this recipe can vary depending on personal preference. Keep in mind each burrito will require one large collard green leaf.

Ingredients:

  • Large collard green leaves (as big as you can find)
  • Avocado (sliced)
  • Fresh cilantro (diced)
  • Cooked Brown rice (prepared per instructions)
  • Black beans
  • Diced tomatoes
  • Diced onion, green peppers and mushrooms (sautéed with minced garlic)
  • Salsa (and/or sour cream)
  • Shredded Cheese of your choice

Directions: First wash your collard greens. Lay collard green leaves flat on a cutting board and cut off the steams at the base. Then using a knife or vegetable peeler, shave along the remaining part of the stem (this will help with the rolling process). Next prepare your filling ingredients. Once items are ready, it is time to fill your burrito. After filled to your liking, fold in on both sides and roll them up. Enjoy these green burritos as an alternative to the traditional tortilla wrapped ones.

** You can steam your collards prior to preparing your dish if you prefer a more tender wrap. Be sure to let them cool completely before filling. Also feel free to add shredded chicken, ground turkey or shrimp to your burritos.

Fruity Green Smoothie

Fruity Green Smoothie

Ingredients:

  • ¾ cup vanilla almond milk (or any milk of your choosing)
  • 1 cup fresh baby spinach leaves
  • 1 ripe banana
  • 1/2 cup frozen mango chunks

Directions: Place all the ingredients into a blender. Mix until smooth, feel free to add additional milk for a thinner smoothie. Enjoy immediately or freeze for later.
